AIP TACO MEAT

INTRODUCTION

As someone who was recently diagnosed with Mast Cell Activation Syndrome, and has spent the last almost thirty years of my life without any dietary restrictions, you can imagine how hard it is now to suddenly become ill to foods I had been enjoying my whole life. My journey to wellness lead me to create each and every one of these recipes featured on Damngoodthyme.

With the diagnosis of MCAS came hormonal imbalances, leading to hypothyroidism and PCOS. What I was unaware of at the time of these diagnoses, was that diet would play the biggest role in helping me achieve remission and lose the weight gained from all of the inflammation my body was under. I began to prioritize eating high protein meals to help with blood sugar imbalances.

While working from home has its benefits, it always seems as though dinner time creeps up on me. I often find myself unprepared and in a hurry trying to figure out what to throw together and after a long day working, the last thing I want to do is be prepping and cooking a meal that takes over forty five minutes. To stress less, I focus on creating simple dinners that are high in protein and ready in under forty five minutes like this AIP Taco Meat.

The taco meat is seasoned perfectly with a mixture of oregano, ginger, turmeric, cinnamon, garlic and onion powder to bring out all the flavors, without the inflammation from the pepper based spices that are typically used.

INGREDIENTS 


  • 1/2 tsp dried oregano

  • 1/2 tsp onion powder

  • 1/4 tsp garlic powder

  • 1/4 tsp ginger

  • 1/4 tsp cinnamon

  • 1/4 tsp turmeric

  • Zest of one lime

  • 2 TBSP olive oil

  • 1lb ground meat of choice

  • 1 TBSP chopped green onion

  • 1/2 cup cilantro

Ground Beef: The ground beef can be substituted with ground turkey or ground chicken if preferred.

HOW TO MAKE THE DISH

  1. Combine the Spices: Combine sea salt, dried spices and lime zest into a small bowl.

  2.  Heat the Spices: In a large skillet, heat olive oil on medium heat and sauté the taco seasoning for about 2 minutes so that the spices release their flavor

  3. Cook the Meat: Add ground beef or meat of choice, cilantro and green onion to the skillet and sauté until the meat is cooked, about 8 minutes.

  4. Assemble: Assemble the taco with your favorite AIP compliant wrap, or make a bowl with your favorite add ins!

STORAGE INSTRUCTIONS

Cooling Before Storage:

  • Allow the AIP taco meat to cool slightly before storing it. Avoid leaving it at room temperature for an extended period.

Refrigeration:

  • For short-term storage, place the cooked AIP taco meat in an airtight container or a sealed plastic bag.

  • Refrigerate it promptly to slow down bacterial growth.

  • Cooked taco meat can be stored in the refrigerator for up to 3-4 days.

Portioning:

  • Consider dividing the cooked taco meat into smaller portions before refrigerating. This allows for easy reheating of individual servings without exposing the entire batch to temperature changes.

Avoid Cross-Contamination:

  • When storing AIP taco meat, make sure to keep it separate from other foods in the refrigerator to prevent cross-contamination.

Labeling:

  • If you have multiple containers of cooked taco meat or if you're storing it for an extended period, label the container with the date to help you track its freshness.

Reheating:

  • When reheating AIP taco meat, ensure it reaches an internal temperature of 165°F (74°C) to kill any potential bacteria.

  • You can reheat it on the stove, in the oven, or in the microwave. Use your preferred method, but be cautious not to overcook, as this may affect the texture.

Freezing (for Longer Storage):

  • If you don't plan to use the cooked taco meat within a few days, consider freezing it for longer storage.

  • Allow the cooked beef to cool completely before transferring it to a freezer-safe container or vacuum-sealed bag.

  • Cooked taco meat can be stored in the freezer for up to 2-3 months.

Thawing Frozen Taco Meat:

  • Thaw frozen AIP taco meat in the refrigerator overnight or use the defrost function on your microwave.

  • Once thawed, consume it promptly and do not refreeze unless you've cooked it again.
