AIP PLANTAIN FRIES

INTRODUCTION

As someone who was recently diagnosed with Mast Cell Activation Syndrome, and has spent the last almost thirty years of my life without any dietary restrictions, you can imagine how hard it is now to suddenly become ill to foods I had been enjoying my whole life. My journey to wellness lead me to create each and every one of these recipes featured on Damngoodthyme.

My sole reason for starting Damngoodthyme was to show that healing did not mean removing the foods we enjoyed, but rather replacing the ingredients with ones that are better for us.


I would assume that most people would not think of eating a French Fry while on their healing journey, however, would certainly be craving a salty pick me up after a few days in. Thats why I created these AIP Plantain Fries.

These golden fries are crafted from nutrient-packed green plantains, expertly seasoned and baked to crispy perfection. Whether enjoyed as a snack, a side dish, or a satisfying accompaniment to your favorite protein, these fries prove that healthy can indeed be both flavorful and satisfying.

INGREDIENTS 

  • 2 ripe plantains

  • 2 tablespoons olive oil or avocado oil

  • 1 teaspoon garlic powder (omit for strict AIP)

  • 1 teaspoon onion powder (omit for strict AIP)

  • 1 teaspoon dried oregano

  • 1/2 teaspoon sea salt

  • Fresh parsley, chopped (for garnish, optional)

INGREDIENT SUBSTITUTIONS 

Garlic/Onion Powder: Feel free to switch up the spices to flavor these fries to your liking!

HOW TO MAKE THE DISH

  1. Prepare the Plantains: Peel the plantains and cut them into thin strips, resembling fries. Aim for uniform size to ensure even cooking.

  2. Coat with Oil: In a large bowl, toss the plantain strips with olive oil or avocado oil until well-coated.

  3. Season the Fries: Add garlic powder (omit for strict AIP), onion powder (omit for strict AIP), dried oregano, and sea salt to the plantain strips. Toss again to evenly distribute the seasonings.

  4. Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for a few minutes.

  5. Arrange in the Air Fryer Basket: Place the seasoned plantain strips in a single layer in the air fryer basket. You may need to cook them in batches to avoid overcrowding.

  6. Air Fry: Air fry the plantain fries at 375°F (190°C) for 12-15 minutes, shaking the basket halfway through to ensure even cooking. The fries should be golden brown and crispy.

  7. Check for Doneness: Check the fries for doneness by testing one for crispiness. If needed, you can air fry for an additional 2-3 minutes.

  8. Garnish and Serve: Once done, remove the plantain fries from the air fryer and place them on a serving plate. Optionally, garnish with fresh chopped parsley for a burst of color and added flavor.

  9. Serve with Dip (Optional):Enjoy the AIP Plantain Fries on their own or pair them with your favorite AIP-friendly dipping sauce.
