Introduction


Brownie Bliss Bites


As someone who was recently diagnosed with Mast Cell Activation Syndrome, and has spent the last almost thirty years of my life without any dietary restrictions, you can imagine how hard it is now to suddenly become ill to foods I had been enjoying my whole life. My journey to wellness lead me to create each and every one of these recipes featured on damn good thyme.


For the first twenty years of my life, I followed a plant-based lifestyle filled with beautiful salads, homemade veggie burgers, and every type of smoothie bowl you could imagine.


While I no longer consume nuts/seeds/or legumes, due to the fact that I developed mast cell activation syndrome, I still enjoy making some of my favorite recipes for friends and family.


Today, I share with you a family favorite- these Brownie Bliss Bites! These bites give all the flavor of a chocolatey/nutty brownie without any baking required. You can even add a scoop of protein to them to make them extra nutrient rich! See below for a discounted link!

How to Make the Brownie Bites


Ingredients for the Brownie Bliss Bites

  • 1/4 cup raw cashews

  • 3/4 cup raw walnuts

  • 1 cup pitted dates

  • 2 tablespoons cacao powder

  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon dark chocolate chips


Ingredient Substitutions

Protein Powder: Feel free to add in any protein powder, to do so, simply double the amount of dates you use!

How to Make the Recipe:

  1. Add all Ingredients to a Food Processer: Add the walnuts, cashews, dates, cacao powder, vanilla and salt in a food processer or high powered blender. Process until well combined and sticking together.

  2. Add Chocolate Chips: Add the chocolate chips in and pulse one or two times to disperse.

  3. Form Bites: Using your hands, form the dough into balls, using about 1 tablespoon of the mixture for each bite.

  4. Enjoy: Either enjoy the bites right away or store for later in the fridge!

What ingredients can I substitute?

I don't recommend substituting any ingredients, however, feel free to add in protein powder for an extra nutrient rich boost. To do so, double the amount of dates for every scoop of protein powder you add!

  1. Refrigeration:

  2. If your protein bites contain perishable ingredients like fresh fruits, dairy, or nut butters, it's advisable to store them in the refrigerator.

  5. Store protein bites in an airtight container to protect them from moisture and air exposure. These are my favorite airtight containers for refrigeration storage.

  6. This helps maintain their texture and prevents them from becoming too dry.

  7. Freezing:

  8. Protein bites can often be frozen for longer-term storage. Place them in an airtight container or wrap them individually in plastic wrap before freezing.

  9. Allow them to thaw at room temperature for a few minutes before consuming.

  10. Cool, Dark Place:

  11. If your protein bites do not contain highly perishable ingredients, you can store them in a cool, dark place away from direct sunlight.

  12. Exposure to heat and light can cause ingredients like chocolate or nut butters to soften or melt.

  13. Separation:

  14. If you're storing different flavors of protein bites together, consider separating them with parchment paper to prevent any flavor transfer.

  15. Consume Within a Reasonable Timeframe:

  16. While protein bites can have a decent shelf life, it's best to consume them within a reasonable timeframe to enjoy their optimal freshness and taste.

Subbed the cocoa powder with equal part dark cocoa powder and these came out great, ty :)
