Ingredients for the Hearty AIP Chicken Soup

  • Chicken Broth (or bone broth): A nourishing and flavorful base rich in minerals and collagen, perfect for supporting immune health and soothing the body.

  • Shredded Chicken: Tender and protein-packed, this chicken adds heartiness and texture to the soup, keeping you full and satisfied.

  • Garlic: Known for its immune-boosting and anti-inflammatory benefits, garlic adds a savory richness to the broth.

  • Ginger: A warming spice with anti-inflammatory and digestive benefits, ginger brings a subtle heat and a refreshing zest to the soup.

  • Lemon Juice: Brightens up the soup with a hint of acidity, while offering a boost of vitamin C to support your immune system.

  • Celery: Adds a crisp texture and a slightly earthy flavor, along with essential vitamins and minerals that help reduce inflammation and promote overall health.

  • Cassava Flour Orzo: A grain-free alternative that mimics traditional pasta, adding a comforting and chewy texture while keeping the soup AIP-friendly.

Ingredient Substitutions:

  • Chicken Broth (or bone broth) :Substitute with vegetable broth or turkey broth for a different flavor profile.

  • Shredded Chicken: Replace with shredded turkey or tofu (if not following AIP) for a plant-based option.

  • Finely Minced Onion: Use shallots or leeks for a milder, sweeter flavor.

  • Garlic: Substitute with garlic-infused olive oil for those sensitive to garlic or following a low-FODMAP diet.

  • Ginger: Swap with turmeric for similar anti-inflammatory benefits and a slightly different flavor.

  • Lemon Juice: Use lime juice or a splash of apple cider vinegar for a different acidic note.

  • Celery: Substitute with fennel for a hint of anise, or use zucchini for a milder flavor.

  • Cassava Flour Orzo: Replace with zucchini noodles (zoodles), cauliflower rice, or sweet potato noodles (if not sensitive to sweet potatoes) for other AIP-friendly alternatives.

How to Make the AIP Hearty Chicken Soup

Instructions:

  1. Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the minced onion, garlic, ginger, and celery. Cook for about 5-7 minutes until the vegetables are softened and fragrant.

  2. Add the Broth: Pour in the chicken broth and bring the mixture to a boil.

  3. Simmer the Soup: Once boiling, reduce the heat to a simmer. Stir in the shredded chicken and let the soup simmer for about 15 minutes, allowing the flavors to meld together.

  4. Cook the Orzo: While the soup simmers, cook the cassava flour orzo according to package instructions. Drain and set aside.

  5. Add Lemon Juice & Season: Stir in the lemon juice, and season the soup with salt and pepper to taste. If desired, adjust the lemon juice for more brightness.

  6. Combine & Serve: Add the cooked cassava orzo to the soup. Stir well and let it heat through for another 2-3 minutes.

  7. Garnish and Serve: Serve hot, garnished with fresh herbs if desired. Enjoy the comforting, immune-boosting goodness!

Frequently Asked Questions

  • Can I use store-bought rotisserie chicken instead of cooking my own? Yes, store-bought rotisserie chicken is a great time-saving option! Just be sure to choose one without any added sugars or non-AIP-friendly seasonings if you’re following the AIP diet.

  • Can I freeze this chicken soup? Absolutely! This soup freezes well. Let it cool completely, then transfer it to an airtight container. It can be frozen for up to 3 months. Reheat it on the stove for a quick, hearty meal.

  • Can I substitute cassava flour orzo with a different grain-free option? Yes, you can use zucchini noodles (zoodles), cauliflower rice, or even spaghetti squash for a grain-free, AIP-friendly option.

  • How can I make the soup more flavorful? If you prefer a richer flavor, you can add more garlic, ginger, or herbs like thyme and rosemary. You can also use bone broth instead of regular chicken broth for extra depth and nutrients.

Storage Instructions:

  1. Refrigerator:

    • Allow the soup to cool to room temperature before storing.

    • Transfer the soup to an airtight container.

    • Store in the refrigerator for up to 4 days.

    • Reheat on the stovetop over medium heat or in the microwave, stirring occasionally.

  2. Freezer:

    • Once cooled, transfer the soup to freezer-safe containers or heavy-duty freezer bags. Be sure to leave some space at the top of the container, as the soup will expand when frozen.

    • Label with the date and store in the freezer for up to 3 months.

    • To reheat, thaw the soup in the refrigerator overnight, then warm it on the stovetop over medium heat until fully heated through.

Tip: If freezing, it's best to cook the orzo separately and add it fresh when reheating, as grain-free pasta alternatives like cassava flour orzo can change texture after freezing.
